This traditional festive recipe is the perfect holiday treat. Thread them with a beautiful ribbon and gift them to your loved ones, or make them over the holidays with the kids. This delicious recipe is sure to impress.

Ingredients

Biscuit:
125g butter, at room temperature
100g brown sugar
125ml golden syrup
1 egg yolk
375g plain flour
20g ground ginger powder
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
Plain flour, to dust

Icing:
50g egg white
400g of pure icing sugar, sifted

Method

Preheat your oven to 160°C.

In a bowl, beat the butter and brown sugar until pale and creamy. Add the golden syrup and egg yolk and beat until combined. Stir in the flour, ginger, mixed spice and bicarbonate of soda.

Once mixed together lightly flour your kitchen bench and place the dough onto the surface. Knead until smooth. Place mix in a bowl and cover it with cling wrap then rest in the fridge for 30 minutes.

Once rested, place the dough between 2 sheets of baking paper and roll out until about 5mm thick. Use a 9cm biscuit cutter to cut out shapes, we opted for stars and hearts. Place biscuits onto trays leaving 3cm between each. Repeat with any excess dough then pierce the top of each biscuit with a 1cm round hole. You can purchase a 1cm biscuit cutter from your local cake shop to help.

Bake in the oven for 10 minutes or until brown.

While biscuits are baking create the icing by whisking the egg white until soft peaks form. Gradually add icing sugar and beat until firm but not so firm that you can’t use a piping bag to decorate your gingerbread biscuits.

Remove biscuits from the oven and transfer to a cooling rack. Once cooled, using a piping bag decorate your biscuits with icing. We opted for thin zig zag patterns. Leave the biscuits on the kitchen bench for approximately 20 minutes to set, or until the icing is firm to touch.

After the icing has firmed, thread your ribbon through the hole in the biscuit and loop into a bow.

To gift to friends and family, place some baking paper into a 10cm box with 3 biscuits on top. Personalise your gift by wrapping a decorative ribbon around the box with a handwritten name tag.
